Snapshot Info: The CIA is a very prestigious chef school with campuses in Hyde Park, NY, Napa Valley, CA, San Antonio, TX and Singapore. According to one of our guides, “You know you want to be a chef when you spend hours on your feet chopping carrots and then want to come back and do it all over again the next day.”

The CIA has 5 working restaurants which are open to the public, as well as its own gardens (right). Classes are operated somewhat like cooking shows, with overhead cameras that broadcast what the chef/teacher is doing.
My impressions of the CIA were “it’s organic, practical, middle class, unpretentious, very hard working, and it smells great!”
Famous alumni include Anthony Bourdain, Cat Cora, Michael Chiarello, Roy Yamaguchi, Duff “Ace of Cakes” Goldman, Todd English, Rocco DiSpirito, and Sara Moulton.
